Seafood chowder
This rainy week we are focusing on the foods that warm you from the inside out, like seafood chowder.
Ingredients
- 1 Leek
- 3 Carrots
- 4 Garlic Cloves
- 1CM – ish size ginger
- 2 X Chillies (or to taste)
- 2 TPSN Flour
- White wine (some for the Chowder, some for your glass)
- 750ML Fish stock
- 2 Potatoes (optional)
- 150ML Cream
- Seafood- We used; Fresh fish, prawns, mussels, scallops, smoked salmon, squid and smoked gemfish.

- Finely chop the leek, garlic and ginger. Dice the carrots
- Add to pot on medium to high heat with a large knob of butter and chillis and let sweat for 5 mins
- Add the flour in and mix. As it starts to bind, deglaze the pot with 2 glugs of white wine
- Add the fish stock and diced potatoes (optional)
- Once the potato is cooked, add in 150ML of cream and season with salt and pepper
- Bring to boil and then add in your seafood
- Stir through and let simmer for 5 minutes. After 5 take it off the lid and let it sit with the lid on for 5 more minutes.
- Ready to serve, garnish with greens, lemon and enjoy.
