Seafood chowder

This rainy week we are focusing on the foods that warm you from the inside out, like seafood chowder.

Ingredients

  • 1 Leek
  • 3 Carrots
  • 4 Garlic Cloves
  • 1CM – ish size ginger
  • 2 X Chillies (or to taste)
  • 2 TPSN Flour
  • White wine (some for the Chowder, some for your glass)
  • 750ML Fish stock
  • 2 Potatoes (optional)
  • 150ML Cream
  • Seafood- We used; Fresh fish, prawns, mussels, scallops, smoked salmon, squid and smoked gemfish.

directions

  1. Finely chop the leek, garlic and ginger. Dice the carrots
  2. Add to pot on medium to high heat with a large knob of butter and chillis and let sweat for 5 mins
  3. Add the flour in and mix. As it starts to bind, deglaze the pot with 2 glugs of white wine
  4. Add the fish stock and diced potatoes (optional)
  5. Once the potato is cooked, add in 150ML of cream and season with salt and pepper
  6. Bring to boil and then add in your seafood
  7. Stir through and let simmer for 5 minutes. After 5 take it off the lid and let it sit with the lid on for 5 more minutes.
  8. Ready to serve, garnish with greens, lemon and enjoy.
