Summer mango salad


  • 300gm crayfish meat or similar cooked deveined diced
  • 1 large mango diced
  • 1 large avo diced
  • Juice of two limes
  • Zest of one lime
  • 1 bunch coriander finely chopped
  • 1 red chilli de-seeded finely sliced
  • 1 tsp sesame oil or avocado oil or EVO 


  1. Dice meat, mango and avocado into small cubes and mix together.
  2. Whisk balance of ingredients together and toss into prawn mix.
  3. Season to taste and plate or serve on lettuce cups with your preferred garnish.
