Summer mango salad
Ingredients
- 300gm crayfish meat or similar cooked deveined diced
- 1 large mango diced
- 1 large avo diced
- Juice of two limes
- Zest of one lime
- 1 bunch coriander finely chopped
- 1 red chilli de-seeded finely sliced
- 1 tsp sesame oil or avocado oil or EVO
directions
- Dice meat, mango and avocado into small cubes and mix together.
- Whisk balance of ingredients together and toss into prawn mix.
- Season to taste and plate or serve on lettuce cups with your preferred garnish.
