Wahoo, a common predator in tropical waters, the renegade teenager, the pack hunter, and fearless adversary. Now that aside, this underwater missile is delicious and well worth targeting and a welcome bycatch.
Ingredients:
Once dispatched, bled and chilled for a couple of hours, remove fillets, skin and cut steaks to at least one inch in thickness.
Method:
Preheat a grill plate to FN hot, and sear for a minute or until you can see that the steak is cooked nearly one-third through.
Flip the steak and repeat.
Rest briefly then serve.
Wahoo is as lean as a lean thing and will dry out quickly if you do not keep an eye it.
Plate it up and use whatever condiments that float your boat. Fresh is always best so something like a salsa verde is just the ticket.
