Seared Sesame Tuna
Kia orana Koutou, Welcome to Day 4 of with our Pacific Biomass study and we revisit Yellowfin tuna….. to be fair several meals of Tuna were had.
Thunnus Albacares, the oceans torpedo makes for great eating and menu offerings.
This easy fast recipe needs only 3 ingredients. Tuna loin, Sesame seeds, toasted Sesame oil.
Method:
- Trim the loin to the shape and size you want.
- Towel dry the loin and brush lightly with the toasted Sesame oil.
- Coat the loin liberally with sesame seeds
- Carefully lay the coated loin into a hot dry pan.
- Turn the loin every 60 seconds so all 4 sides are cooked to the depth that you want.
- In our picture this equated to 2 minutes per side.
- Remove and place into the freezer for 20-30 minutes to chill down.
- Then with a very sharp knife, carefully slice and serve with condiments of your choice.
- I find a light soy sauce or citrus soy sauce (aka Ponzu) is the ticket for this.
No need for garnish or salad, and pairs really really well with a dry Riesling or a chilli Margarita
