Simple Summer Snapper (or any other fish)
‘Tis the season….to be out there harvesting them summer Snappers’.
Just when you need something simple for dinner and/or to serve a number of guests without a lot of mess and time is just what the doctor orders after a busy Christmas!
Abundant in numbers now, Snapper or any other fish species you catch this recipe caters to them all.
Also abundant at the grocer’s and vege markets are herbs, greens, citrus. So with that in mind a simple clean quick meal for many if you have the ingredients on board.
Marinade:
Ingredients:
- One Half inch cube fresh ginger fine diced
- 3 cloves of fresh garlic fine diced
- Quarter medium heat red chilli finely diced
- Green ends of a spring onioned diced (or sliced)
- One glug of Rice wine vinegar
- One glug of Olive oil
- Juice of one lemon or lime
- One teaspoon of brown sugar
- Salt and Pepper
- Fillets of your Catch of the Day
Method:
- Mix to combine all ingredients above and rest for 15 min.
- On to a sheet of parchment paper, lay your fillet, top with marinade, add a thin lime slice or two then wrap like wrapping a Christmas present for your favourite Galley Gourmet Chef.
- Onto a tray and into a preheated oven 10-14 minutes at 180C. I say tray as you can and will get leakage… from the cooked parcel…. so you want to contain and not drip over the galley floor or bare feet.
- Rest until you are ready to plate up. We added a quick fry of greens with soy and chilli and rice, but the snapper tastes just as marvelous if not better with a fresh fried egg or on fresh white thick cut buttered bread or your favourite Summer Salad – highly recommend Rob’s Summer Mango Salad!
